Ingredients
- 500 g (1 lb 2 oz) penne or spiral pasta
- 2 large red capsicums (peppers)
- 1 small red onion, finely chopped
- 2 large handfuls flat-leaf (Italian) parsley leaves
- 2 anchovies, whole or chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
Method
1. Cook the pasta in a large saucepan of rapidly boiling salted water until al dente. Drain and rinse under cold water.
2. Cut the capsicum into large pieces, removing the seeds and membrane. Place skin side up under a hot grill (broiler) and cook for 8 minutes, or until the skin is blistered and black. Cool in a plastic bag, then peel away the skin and cut the flesh into thin strips.
3. Toss together the pasta, capsicum, onion, parsley, anchovies, oil, lemon juice and season. Serve immediately.
