Ingredients
- 6 large green chilies, roasted and peeled
- 1/2 lb. cheese, shredded
- 6 eggs, separated
- 1/2 tsp. salt
- flour
- oil for frying
- 1 medium onion, chopped (optional)
- shredded beef (optional)
Method
- Cut chilies down the middle, open up and fill each with cheese (and beef and onions, if desired).
- Dust with flour and set aside. Beat egg whites until stiff.
- Fold in 1 teaspoon flour and salt to taste.
- Add egg yolks.
- Heat oil in a skillet.
- Dip chilies one at a time in egg mixture and place in skillet.
- Turn and cook until golden brown on both sides.
- Serve immediately.
