Ingredients

  • 6 large green chilies, roasted and peeled
  • 1/2 lb. cheese, shredded
  • 6 eggs, separated
  • 1/2 tsp. salt
  • flour
  • oil for frying
  • 1 medium onion, chopped (optional)
  • shredded beef (optional)

Method

  • Cut chilies down the middle, open up and fill each with cheese (and beef and onions, if desired).
  • Dust with flour and set aside. Beat egg whites until stiff.
  • Fold in 1 teaspoon flour and salt to taste.
  • Add egg yolks.
  • Heat oil in a skillet.
  • Dip chilies one at a time in egg mixture and place in skillet.
  • Turn and cook until golden brown on both sides.
  • Serve immediately.
