Ingredients

  • 1/2 c. olive oil
  • 2 cloves garlic, chopped
  • 1 lb. chicken cutlets, cut into strips
  • 1 (4 oz.) can mushrooms, drained
  • 1/2 c. butter
  • juice of 1 lemon
  • sprinkle of parsley, pepper and oregano
  • 1 c. chicken broth
  • 1 lb. pasta, cooked according to pkg. instructions

Method

  • Heat oil and saute garlic until light brown. Add chicken strips and saute about 5 minutes. Remove chicken and most of the oil.
  • Add mushrooms and butter. Saute until mushrooms are a little brown. Return chicken to pan along with lemon juice, parsley, pepper, oregano and broth.
  • Simmer until hot and serve over pasta. Makes 4 servings.
