Ingredients
- 1/2 c. olive oil
- 2 cloves garlic, chopped
- 1 lb. chicken cutlets, cut into strips
- 1 (4 oz.) can mushrooms, drained
- 1/2 c. butter
- juice of 1 lemon
- sprinkle of parsley, pepper and oregano
- 1 c. chicken broth
- 1 lb. pasta, cooked according to pkg. instructions
Method
- Heat oil and saute garlic until light brown. Add chicken strips and saute about 5 minutes. Remove chicken and most of the oil.
- Add mushrooms and butter. Saute until mushrooms are a little brown. Return chicken to pan along with lemon juice, parsley, pepper, oregano and broth.
- Simmer until hot and serve over pasta. Makes 4 servings.
