Ingredients

  • 2 chicken breasts, boneless, skinless
  • 12 teaspoon cajun seasoning
  • 23 cup cream of chicken soup, undiluted
  • 14 cup water
  • 4 ounces of chopped green chilies
  • 12 teaspoon lemon juice
  • 2 tablespoons sour cream
  • 1 12 cups cooked rice

Method

  • Sprinkle chicken with Cajun seasoning.
  • Spray medium skillet with cooking spray.
  • Brown chicken on both sides.
  • In small bowl, combine the soup, water, chilies and lemon juice.
  • Stir into skillet.
  • Bring to boil.
  • Reduce heat; cover and simmer for 8-10 mins or until juices run clear.
  • Remove from heat; stir in sour cream.
  • Serve over rice.
