Ingredients
- 4 chicken breast fillets
- 2 1/2 tbsp olive oil
- 2 cloves garlic (finely chopped)
- 1-2 small red chillies (finely chopped)
- 1 tbsp honey
- 2 tbsp finely chopped preserved lemon rind
- 1 tbsp chopped flat-leaf parsley
- 1 tbsp lemon juice
- mashed potato and mixed green salad leaves, to serve
Method
Cut 4 chicken breast fillets in half lengthwise. Heat 1 tbsp olive oil in a frying pan over medium
heat and cook fillets for 5 minutes each side or until browned and cooked through. Add 1 1/2 tbsp olive
oil, 2 cloves garlic (finely chopped), 1-2 small red chillies (finely chopped) and 1 tbsp honey. Cook for
1 minute, then add 2 tbsp finely chopped preserved lemon rind, 1 tbsp chopped flat-leaf parsley and
1 tbsp lemon juice.
To serve
Serve with mashed potato and mixed green salad leaves.
