Ingredients

  • 1 stewed hen
  • 1 (10 oz.) pkg. noodles
  • 1 small onion, diced
  • 2 Tbsp. pimento
  • 1/2 tsp. oregano
  • 1 can cream of mushroom soup
  • 1 (13 oz.) can evaporated milk
  • 1/2 lb. cheese, grated

Method

  • After stewing chicken, remove meat from broth (when cool), bone and dice.
  • Set aside.
  • Cook noodles in broth according to package directions.
  • Drain.
  • Mix onions, pimento, oregano and a dash of pepper and soup.
  • Add milk.
  • Stir together and add chicken, drained noodles and half of the grated cheese to soup mixture.
  • Place in 9 x 13-inch casserole.
  • Top with remaining grated cheese.
  • Bake at 350° for about 20 minutes or until bubbly.
