- 2 skinned, cooked chicken breasts, diced
- 1/2 red or yellow pimento, diced
- 12 chopped olives (black)
- 2 green onions, diced
- 1 clove garlic, crushed
- 1 Tbsp. capers (optional)
- 2 Tbsp. chopped parsley
- 1/4 c. mayonnaise (preferably homemade)
- 1/4 c. no-fat yogurt
- 4 whole wheat pitas
Method
- Combine all ingredients in bowl except for pitas.
- Warm the pitas in oven.
- Cut in half and open the pockets.
- Fill each pocket with chicken salad.
