Ingredients

  • 2 strips bacon, chopped
  • 1 tsp. fresh garlic, minced
  • 16 oz. tomatoes (undrained)
  • 1/2 c. uncooked macaroni
  • pepper
  • 8 1/2 oz. red kidney beans
  • Parmesan cheese
  • 1/2 c. chopped onion
  • 28 oz. chicken broth
  • 10 oz. frozen mixed vegetables
  • 1/2 tsp. basil
  • 10 oz. white kidney beans
  • chopped parsley

Method

  • Cook bacon in 4-quart saucepot 2 to 3 minutes, stirring occasionally.
  • Add onion and garlic.
  • Cook 3 to 5 minutes, until onion is tender.
  • Stir in broth, tomatoes, veggies, macaroni and seasonings.
  • Bring to boil.
  • Lower heat and cook 12 minutes.
  • Stir in beans and cook 2 minutes.
  • Skim off foam.
  • Sprinkle with parsley and Parmesan.
