Ingredients

  • 1 whole broiler-fryer chicken
  • 12 cup butter
  • salt and pepper
  • 1 (14 ounce) can cream of chicken soup
  • olive oil

Method

  • Preheat oven to 350.
  • Rinse and pat the chicken dry.
  • Remove the innards if necessary.
  • Season the chicken inside and out with salt and pepper to taste.
  • Smear the stick of butter all over the inside of the bird.
  • Place in a baking dish and drizzle with olive oil.
  • Bake for 1 hour uncovered.
  • Remove bird from the pan to let rest and pour all of that yummy goodness into a small pot along with the can of cream of chicken soup.
  • Stir to combine and bring to a simmer over medium heat.
  • Serve the gravy over rice or potatoes, we prefer rice with this one, and enjoy!
