Ingredients
- 4 breast halves, boneless
- 4 thin slices ham
- 4 slices Swiss cheese
- 4 Tbsp. cornstarch
- 4 Tbsp. butter
- 1/4 tsp. salt
- 1/8 tsp. pepper
Method
- Place meat between sheets of plastic wrap.
- Pound out to 8 or 9 inch diameter with mallet, very thin but no holes.
- Place 1 slice ham and cheese on bottom half, fold over other half.
- Press edges to seal.
- Cover with wrap.
- Pound lightly.
- Sprinkle cornstarch on wrap. Lightly coat meat on both sides.
- Over high heat, melt butter.
- Add chicken pieces.
- Cook 3 minutes on each side until meat is tender and golden.
- Do not overcook.
- Sprinkle with salt and pepper.
