Ingredients
- salsa
- chopped onion
- grated Cheddar cheese
- chopped tomatoes
- eggs
- 1 tsp. butter
Method
- Scramble enough eggs for number you are feeding; set aside. Lightly coat fry pan with butter; heat burrito until slightly brown.
- Place on plate; fill with scrambled eggs, onions, tomatoes, cheese and salsa.
- Roll like eggrolls with ends closed. Place in microwave 1 minute to melt cheese.
- Serve with grits.
