Ingredients

  • 2 chicken breast fillets
  • 300 g pumpkin, peeled and chopped into cubes
  • Olive oil spray
  • 6 Mediterranean wraps
  • 1/2 cup VEGEMITE CHEESYBITE
  • 25 g baby spinach leaves
  • 2 sticks celery, sliced diagonally
  • 1 small red onion, finely sliced

Method

  • PLACE the chicken on a paper lined baking tray and the pumpkin on another.
  • Spray the chicken and pumpkin with oil and bake in a moderate oven 180oC for 25 minutes or until cooked.
  • Set aside to cool.
  • SPREAD each wrap with VEGEMITE CHEESYBITE.
  • Slice the chicken and place on the wraps with some pumpkin, spinach, celery and onion.
  • Roll to enclose the filling.
  • Serve immediately.
