Ingredients
- 2 chicken breast fillets
- 300 g pumpkin, peeled and chopped into cubes
- Olive oil spray
- 6 Mediterranean wraps
- 1/2 cup VEGEMITE CHEESYBITE
- 25 g baby spinach leaves
- 2 sticks celery, sliced diagonally
- 1 small red onion, finely sliced
Method
- PLACE the chicken on a paper lined baking tray and the pumpkin on another.
- Spray the chicken and pumpkin with oil and bake in a moderate oven 180oC for 25 minutes or until cooked.
- Set aside to cool.
- SPREAD each wrap with VEGEMITE CHEESYBITE.
- Slice the chicken and place on the wraps with some pumpkin, spinach, celery and onion.
- Roll to enclose the filling.
- Serve immediately.
