Ingredients

  • 1 lb lima beans, cleaned and drained
  • 2 tablespoons olive oil
  • 4 large garlic cloves, minced
  • 1 large onion, coarsely chopped
  • 2 large carrots, coarsely chopped
  • 1 12 teaspoons dried thyme
  • 1 teaspoon dried rosemary, crumbled
  • 5 cups chicken stock or 5 cups vegetable broth
  • 4 cups water
  • 4 cups coarsely chopped cabbage
  • 1 lb smoked sausage, quartered lengthwise and sliced
  • 1 baking potato, peeled and cut into 1 inch cubes
  • 12 cup shell macaroni
  • salt and pepper

Method

  • In a wide 8 quart pot or dutch oven, heat 2 tbls.
  • oil until hot.
  • Stir in garlic, onions, carrots, thyme and rosemary.
  • Saute until vegetables soften, about 10 minutes.
  • Stir in broth, 4 cups water, cabbage, lima beans, and sausage.
  • Bring to a boil, reduce heat and simmer , partially covered, for 45-55 minutes or until beans are tender.
  • Stir in potato and macaroni.
  • Simmer uncovered for 10-15 minuted or until cooked through.
  • Season to taste.
