Ingredients
- 1 c. sour cram
- 1 c. light cream
- 1 c. chopped onion
- 1 can (4 oz.) chopped green chilies
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 pkg. (2 lb.) frozen hash brown potatoes
- 2 1/2 c. cubed cooked chicken
- 2 1/2 c. (10 oz.) shredded Cheddar cheese, divided
Method
- In a large bowl, combine sour cream, light cream, onion, chilies, salt and pepper.
- Stir in potatoes, chicken and 2 cups of the cheese.
- Pour into a greased 13 x 9 x 2-inch baking dish.
- Bake uncovered at 350° for 1 hour and 15 minutes or until golden brown. Sprinkle with remaining cheese before serving.
- Makes 6 to 8 servings.
- Leftover meat of any kind may be substituted for chicken.
