Ingredients

  • 1 c. sour cram
  • 1 c. light cream
  • 1 c. chopped onion
  • 1 can (4 oz.) chopped green chilies
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 pkg. (2 lb.) frozen hash brown potatoes
  • 2 1/2 c. cubed cooked chicken
  • 2 1/2 c. (10 oz.) shredded Cheddar cheese, divided

Method

  • In a large bowl, combine sour cream, light cream, onion, chilies, salt and pepper.
  • Stir in potatoes, chicken and 2 cups of the cheese.
  • Pour into a greased 13 x 9 x 2-inch baking dish.
  • Bake uncovered at 350° for 1 hour and 15 minutes or until golden brown. Sprinkle with remaining cheese before serving.
  • Makes 6 to 8 servings.
  • Leftover meat of any kind may be substituted for chicken.
