Ingredients

  • 8 None large eggs, separated
  • 1 oz finely grated Parmesan cheese
  • 1/4 cup fresh chives, finely chopped
  • 4 oz smoked ham, finely chopped
  • 3 oz Gruyere cheese, coarsely grated
  • 2 tbsp butter

Method

  • Beat egg whites to soft peaks. Combine egg yolks, Parmesan and 1/2 the chives in another large bowl. Gently fold whites into yolk mixture.
  • Combine ham and Gruyere in medium bowl.
  • Heat 1/2 tbsp butter in a small frying pan. Add 1/4 egg mixture to pan and sprinkle with 1/4 ham mixture. Cook over medium heat until mixture is almost set. Fold omelette in 1/2 then transfer to a plate and cover to keep warm. Repeat to make 3 more omelettes.
  • Serve omelettes sprinkled with remaining chives.
