Ingredients

  • 1 tbsp oil
  • 1 None onion, chopped
  • 1 1/4 lb potatoes, peeled, chopped
  • 3 cups chicken stock
  • 1 (13.5 oz) can artichoke hearts, drained, chopped
  • 2 cloves garlic, sliced
  • 2 tbsp fresh parsley, chopped, to serve

Method

  • Heat oil in a large saucepan over medium heat. Sweat onion for 3 mins, until beginning to soften. Add potatoes, stock and 3 cups water. Bring to a boil, reduce heat and add artichokes and garlic. Simmer for 30 mins, until potatoes are very soft. Let cool slightly then puree. Serve with parsley.
