Ingredients

  • 1 1/2 lb potatoes, peeled
  • 4 tbsp oil
  • 2 bunches red spring onions, shredded
  • 16 slices smoked bacon
  • 7 oz smoked salmon, sliced
  • 3 oz watercress
  • 3/4 cup creme fraiche

Method

  • Cook potatoes in boiling, salted water for 10 mins. Drain and let cool. Coarsely grate. Heat 1 tbsp oil and saute onions for 2-3 mins, until soft. Add to potatoes and season. Shape into 8 rounds. Fry rosti in 2 tbsp oil for 3-4 mins per side, until golden.
  • Fry bacon in remaining oil for 5 mins. Serve rosti with bacon, salmon, watercress and creme fraiche.
