- 4 whole Chicken Breast
- 2 whole Egg Yolks
- 2 Tablespoons Water
- 1/2 cups Flour
- 1 dash Salt
- 1 dash Pepper
- 1 dash Paprika
- 1/4 cups Bread Crumbs
- 3 Tablespoons Parmesan Cheese
- 2 Tablespoons Butter
- 2 cans Mushrooms
- 2 Tablespoons Butter
- 2 Tablespoons Flour
- 1 cup Milk
- 1 teaspoon Worcestershire Sauce
- 1 Tablespoon Parmesan Cheese
- 3/4 cups Grated Cheddar Cheese
- 3/4 cups Mozzarella Cheese
Method
- Place chicken breast between sheets of waxed paper and flatten slightly.
- Whisk egg yolks with water.
- In a large bowl, combine flour, salt, pepper, paprika, bread crumbs, and Parmesan.
- Dip chicken in egg, then roll in flour mix.
- Brown chicken in butter on both sides.
- Place in a shallow baking dish.
- Add the mushrooms and bake at 350 degrees for about 20 minutes.
- (You can also omit adding the mushrooms at this point, and instead add them to the sauce.)
- To prepare the cheese sauce, melt 2 tablespoons of butter in pan.
- (If you are adding the mushrooms to the sauce, this would be the time to add them in.)
- Slowly stir in flour; add milk and cook, stirring, until sauce thickens.
- Season with Worcestershire, Parmesan, cheddar and mozzarella.
- When all is done, put chicken on a serving plate and pour sauce over it.
