Ingredients

  • 4 whole Chicken Breast
  • 2 whole Egg Yolks
  • 2 Tablespoons Water
  • 1/2 cups Flour
  • 1 dash Salt
  • 1 dash Pepper
  • 1 dash Paprika
  • 1/4 cups Bread Crumbs
  • 3 Tablespoons Parmesan Cheese
  • 2 Tablespoons Butter
  • 2 cans Mushrooms
  • 2 Tablespoons Butter
  • 2 Tablespoons Flour
  • 1 cup Milk
  • 1 teaspoon Worcestershire Sauce
  • 1 Tablespoon Parmesan Cheese
  • 3/4 cups Grated Cheddar Cheese
  • 3/4 cups Mozzarella Cheese

Method

  • Place chicken breast between sheets of waxed paper and flatten slightly.
  • Whisk egg yolks with water.
  • In a large bowl, combine flour, salt, pepper, paprika, bread crumbs, and Parmesan.
  • Dip chicken in egg, then roll in flour mix.
  • Brown chicken in butter on both sides.
  • Place in a shallow baking dish.
  • Add the mushrooms and bake at 350 degrees for about 20 minutes.
  • (You can also omit adding the mushrooms at this point, and instead add them to the sauce.)
  • To prepare the cheese sauce, melt 2 tablespoons of butter in pan.
  • (If you are adding the mushrooms to the sauce, this would be the time to add them in.)
  • Slowly stir in flour; add milk and cook, stirring, until sauce thickens.
  • Season with Worcestershire, Parmesan, cheddar and mozzarella.
  • When all is done, put chicken on a serving plate and pour sauce over it.
