- Crust
- 3/4 C coarsely ground walnuts
- 3/4 C crushed graham crackers
- 3 T unsalted butter
- Filling
- 4 8 oz. pkgs of cream cheese at room temp.
- 4 eggs
- 1 1/4 C sugar
- 1 T fresh lemon juice
- 2 t vanilla
- Topping
- 2 C sour cream
- 1/4 sugar
- 1 t vanilla
Method
- Crust - combine ingredients and press into bottom of spring form pan.
- Filling - beat cream cheese until smooth, add eggs, etc. Beat thoroughly. Spoon over crust. Set pan on baking sheet. Bake for 40 -45 min. (10" pan) or 50-55 min. (9" pan). Remove from oven and let sit for 15 min. Combine ingredients for topping. Spoon topping over cheese cake, starting at middle.Return to oven for 5 min. Refrigerate at least 24 hours.
