Ingredients
- 6 medium potatoes
- 1/4 c. butter
- 1/3 c. chives or green onions (optional)
- 2 c. shredded cheese
- 1 1/2 c. sour cream
- 1 tsp. salt
- 1/4 tsp. pepper
Method
- Cook potatoes in skin; cool, peel and shred coarsely.
- Combine cheese and butter over low heat, stirring occasionally, until almost melted.
- Remove from heat and blend in sour cream, onions, salt and pepper.
- Fold in potatoes.
- Pour into greased 2-quart casserole dish.
- Bake at 350° for 30 minutes.
- Serves 8.
