Ingredients

  • 6 medium potatoes, unpeeled
  • 8 Tbsp. margarine
  • 8 oz. shredded Cheddar cheese
  • 8 oz. sour cream
  • 1 tsp. salt
  • 1/2 tsp. white pepper
  • 1/2 c. chopped green onions, including tops
  • paprika for topping

Method

  • Pierce potatoes with a fork.
  • Do not peel.
  • Place in microwave on a paper towel.
  • Cook on High for 20 minutes or until done. Cool slightly; do not peel.
  • Slice and set aside.
  • Place margarine in glass microwave-safe bowl.
  • Cook at High for 2 to 3 minutes to melt.
  • Remove from oven and stir in cheese.
  • When cheese melts, add sour cream, salt, pepper and onions.
  • Gently stir cheese mixture into potatoes.
  • Spoon in microwave-safe 8 x 10-inch baking dish.
  • Top with paprika.
  • Cook, uncovered, on High power for 7 to 8 minutes.
  • Serves 8.
