Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 large rib of celery
  • 4 cups club soda

Method

  • In a small saucepan, combine the water and sugar and bring to a simmer over medium high heat, just until the sugar dissolves.
  • Slice the celery on the bias quite thinly - to get the most surface area possible. Remove the saucepan from the heat and add the celery slices. Let steep until completely cool (about 4 hours). This makes about 1 cup of simple syrup.
  • In a glass, put about 4 tablespoons celery simple syrup over ice and top with 1 cup chilled club soda (you can adjust to your taste).
