Ingredients

  • 1 Avocado
  • 1/2 cups Fat-free Half-and-half
  • 1 Tablespoon Fresh Cilantro, Chopped
  • 1 Tablespoon Freshly Grated Parmesan Cheese
  • 1/2 Lime, Juiced
  • 1 clove Garlic, Minced
  • Salt And Pepper, to taste
  • 8 ounces, weight Rotini Pasta, Cooked According To Package Instructions For Al Dente, Drained

Method

  • Slice the avocado in half and remove the core.
  • Spoon out the flesh and place it in a food processor or blender with the half-and-half, cilantro, Parmesan cheese, lime juice and garlic clove.
  • Blend on high until creamy.
  • Season with salt and pepper to taste.
  • Toss with warm pasta and serve warm or chilled.
