Ingredients

  • 1 head cauliflower
  • 1 10-oz. pkg. tiny peas
  • 1/2 c. sliced pimiento, optional
  • 1 c. diced ham, optional
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 c. water or milk
  • 1 c. grated cheese
  • 1/4 tsp. salt
  • dash pepper

Method

  • Remove leaves and core from cauliflower and steam the whole head until tender.
  • Make a sauce by melting the butter, and adding the flour to blend.
  • Add the milk and cook over low heat until thick, stirring constantly.
  • Add salt and pepper.
  • Add the pimiento, ham, or both and heat through.
  • Add the cheese and stir until melted.
  • To serve, place the steamed cauliflower in a bowl or dish and pour the sauce over it.
  • This makes a very nice centerpiece dish.
  • Be sure the cauliflower is not over cooked so it will stay together as a whole center.
