Ingredients

  • 1 lb. lean hamburger meat
  • 1/2 tsp. salt
  • 1/2 c. celery, chopped
  • 4 c. tomato juice
  • 2 cans cream of celery soup
  • 2 1/2 c. grated carrots
  • 1 tsp. sugar
  • 3 cloves garlic (yes, 3)
  • pepper to taste
  • 1/2 c. green pepper, chopped

Method

  • Brown meat; pour off drippings of fat.
  • Saute celery, onion and green pepper over low heat until tender.
  • Add tomato juice, cream of celery soup, 1 1/2 cups water, sugar, carrots, garlic and pepper.
  • Cook about 15 minutes.
  • Leave carrots a little crunchy. Pour over a slice of Swiss cheese for extra, extra goodness.
