Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 4 eggs
  • 2 c. sugar
  • 3/4 c. oil
  • 2 c. shredded raw carrots
  • 8 oz. can crushed pineapple, drained
  • 1/2 c. flaked coconut
  • 1/2 c. chopped walnuts

Method

  • Sift flour, baking powder, baking soda and spices; set aside. In large bowl, beat eggs slightly.
  • Gradually beat in sugar until it's thick.
  • Gradually stir in oil.
  • Add flour mix and other ingredients and stir well.
  • Bake at 350° for 40 minutes.
