- 2 c. flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 tsp. allspice
- 4 eggs
- 2 c. sugar
- 3/4 c. oil
- 2 c. shredded raw carrots
- 8 oz. can crushed pineapple, drained
- 1/2 c. flaked coconut
- 1/2 c. chopped walnuts
Method
- Sift flour, baking powder, baking soda and spices; set aside. In large bowl, beat eggs slightly.
- Gradually beat in sugar until it's thick.
- Gradually stir in oil.
- Add flour mix and other ingredients and stir well.
- Bake at 350° for 40 minutes.
