Ingredients

  • 2 c. unsifted flour
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 3 eggs
  • 1 1/2 c. sugar
  • 3/4 c. Hellmann's mayo
  • 1 (8 oz.) can crushed pineapple (undrained)
  • 2 c. carrots, coarsely shredded
  • 3/4 c. walnuts, chopped

Method

  • Grease and flour an 11 x 18-inch pan.
  • In a bowl, stir together first five ingredients; set aside.
  • In a large bowl, beat at medium speed the next four ingredients until well blended. Gradually add flour mixture.
  • With spoon stir in carrots and walnuts.
  • Bake at 350°
  • for 30 to 35 minutes.
  • Cool.
  • Top with cream cheese icing.
