Ingredients
- 2 c. unsifted flour
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 3 eggs
- 1 1/2 c. sugar
- 3/4 c. Hellmann's mayo
- 1 (8 oz.) can crushed pineapple (undrained)
- 2 c. carrots, coarsely shredded
- 3/4 c. walnuts, chopped
Method
- Grease and flour an 11 x 18-inch pan.
- In a bowl, stir together first five ingredients; set aside.
- In a large bowl, beat at medium speed the next four ingredients until well blended. Gradually add flour mixture.
- With spoon stir in carrots and walnuts.
- Bake at 350°
- for 30 to 35 minutes.
- Cool.
- Top with cream cheese icing.
