Ingredients

  • 1/2 pound day-old French bread, cubed and lightly toasted.
  • 2 apples, cored and sliced
  • 2/3 cup raisins
  • 2/3 cup coarsely chopped almonds, lightly toasted
  • 6 oz. sharp white cheddar, in 1/4"dice
  • a 5" soft cinnamon stick
  • 2 whole cloves
  • 1/4-1/2 lb. piloncillo, or dark brown sugar

Method

  • Bring 2 cups water to a boil with the piloncillo and spices. Boil till slightly syrupy.
  • Mix the other ingredients in a large bowl. Stir in the syrup. Transfer to a buttered baking dish, and bake at 350 degrees for 30 minutes. Serve warm. Reheats well in the microwave.
