Ingredients

  • 2 (16 oz.) cans sweet potatoes, in heavy syrup
  • 1/2 c. light brown sugar
  • 2 Tbsp. butter or margarine
  • 1/2 tsp. grated orange rind
  • 1/4 tsp. ground cinnamon

Method

  • Drain sweet potatoes, reserving 1/4 cup syrup.
  • In large skillet, heat brown sugar, butter, orange rind, cinnamon and reserved syrup to boiling.
  • Reduce heat and simmer until slightly thickened, about 1 minute.
  • Add sweet potatoes, heat through, gently stirring, to coat with glaze.
  • Makes 6 servings.
