Ingredients
- 2 (16 oz.) cans sweet potatoes, in heavy syrup
- 1/2 c. light brown sugar
- 2 Tbsp. butter or margarine
- 1/2 tsp. grated orange rind
- 1/4 tsp. ground cinnamon
Method
- Drain sweet potatoes, reserving 1/4 cup syrup.
- In large skillet, heat brown sugar, butter, orange rind, cinnamon and reserved syrup to boiling.
- Reduce heat and simmer until slightly thickened, about 1 minute.
- Add sweet potatoes, heat through, gently stirring, to coat with glaze.
- Makes 6 servings.
