Ingredients

  • 1/4 cup olive oil
  • 6 None potatoes, peeled and quartered
  • 1/2 None acorn squash, peeled, seeded and cut into 6 wedges
  • 3 None red onions, peeled and cut into wedges
  • 6 None parsnips, peeled and halved lengthwise
  • 6 None baby beets, trimmed

Method

  • Preheat the oven to 350°F. Heat oil in a roasting pan in the oven for 5 mins.
  • Place vegetables in the pan and baste with oil. Roast for 40-45 mins, turning once. Drain on paper towels. Season and serve hot.
