Ingredients

  • 2 1/4 cups rolled oats or quick-cooking
  • 1 cup flour, all-purpose or half whole wheat, half white flour
  • 3/4 cup brown sugar or up to 1 cup
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 3/4 cup butter, unsalted softened
  • 14 ounces milk, sweetened condensed 1 can
  • 1 cup peanut butter
  • 1 1/4 cups chocolate chips chocolate chips

Method

  • Preheat oven to 350F (180C) F (175 degrees C).
  • Coat a 9x13 inch baking pan or brownie pan with cooking spray, or greased with butter.
  • Add the oats, flour, brown sugar, salt and baking soda in a large mixing bowl, and stir until well mixed.
  • Use your fingers to mix in the butter until forms a crumbly mixture.
  • Reserve 1 1/2 cups of the crumbs, and evenly pat the rest into the bottom of the prepared brownie pan or baking pan.
  • In a medium bowl, add the sweetened condensed milk and peanut butter, and whisk until well blended and smooth.
  • Spread evenly over the oatmeal layer.
  • Sprinkle the chocolate chips over the peanut butter and condensed milk layer.
  • Top with reserved crumbles evenly.
  • Bake for about 35 minutes until golden brown.
  • Remove from the oven and allow to cool completely on a wire rack.
  • Cut into 24 bars and serve.
