- 2 1/4 cups rolled oats or quick-cooking
- 1 cup flour, all-purpose or half whole wheat, half white flour
- 3/4 cup brown sugar or up to 1 cup
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 3/4 cup butter, unsalted softened
- 14 ounces milk, sweetened condensed 1 can
- 1 cup peanut butter
- 1 1/4 cups chocolate chips chocolate chips
Method
- Preheat oven to 350F (180C) F (175 degrees C).
- Coat a 9x13 inch baking pan or brownie pan with cooking spray, or greased with butter.
- Add the oats, flour, brown sugar, salt and baking soda in a large mixing bowl, and stir until well mixed.
- Use your fingers to mix in the butter until forms a crumbly mixture.
- Reserve 1 1/2 cups of the crumbs, and evenly pat the rest into the bottom of the prepared brownie pan or baking pan.
- In a medium bowl, add the sweetened condensed milk and peanut butter, and whisk until well blended and smooth.
- Spread evenly over the oatmeal layer.
- Sprinkle the chocolate chips over the peanut butter and condensed milk layer.
- Top with reserved crumbles evenly.
- Bake for about 35 minutes until golden brown.
- Remove from the oven and allow to cool completely on a wire rack.
- Cut into 24 bars and serve.
