Ingredients

  • 1/2 c. chopped onion
  • 2 Tbsp. oil
  • 2 medium zucchini, scrubbed and sliced
  • 1 lb. canned tomatoes, chopped
  • 1/4 tsp. oregano
  • 1/2 tsp. salt
  • 1/4 tsp. Italian seasoning
  • shredded Cheddar cheese
  • croutons

Method

  • Saute onion in oil.
  • Add vegetables and seasonings.
  • Simmer for 15 minutes.
  • In 2-quart casserole, layer: half of vegetable mixture, cheese, other half of vegetable mixture and croutons. Pour over vegetable juices and sprinkle with more cheese.
  • Bake at 350° for 15 minutes.
