Ingredients
- 1/2 c. chopped onion
- 2 Tbsp. oil
- 2 medium zucchini, scrubbed and sliced
- 1 lb. canned tomatoes, chopped
- 1/4 tsp. oregano
- 1/2 tsp. salt
- 1/4 tsp. Italian seasoning
- shredded Cheddar cheese
- croutons
Method
- Saute onion in oil.
- Add vegetables and seasonings.
- Simmer for 15 minutes.
- In 2-quart casserole, layer: half of vegetable mixture, cheese, other half of vegetable mixture and croutons. Pour over vegetable juices and sprinkle with more cheese.
- Bake at 350° for 15 minutes.
