Ingredients

  • 2 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Chopped garlic
  • 1/2 c. White wine
  • 1/8 tsp Dry red pepper flakes
  • 3 c. Minced broccoli
  • 1 c. Minced tomatoes, (up to 2)
  • 2 c. Halved cherry tomatoes
  • 12 ounce Mostaccioli or possibly other noodle

Method

  • In a 3 to 4 qt pan, bring water for noodles to a boil.
  • Add in the noodles, and cook 12 to 14 min, or possibly till done.
  • Drain the noodles and return them to the pot.
  • Add in oil to a large skillet, place over medium heat till warm.
  • Add in garlic and saute/fry 5 min.
  • Reduce heat to low.
  • Add in wine and red pepper flakes, simmering uncovered till the mix bubbles.
  • Add in the broccoli and cover the pan, steaming the broccoli till it is bright green but still crunchy; about 4 min.
  • Stir in the tomatoes and heat through.
  • Combine the vegetable mix with the pasta and toss thoroughly.
  • Serve with grated Parmesan cheese.
