Ingredients

  • 1 medium onion, chopped finely
  • 2 ribs celery, chopped finely
  • 2 bunches broccoli
  • 2 c. cooked rice
  • salt to taste
  • Velveeta cheese (about 2-inch hunk off the loaf), cubed
  • 1 egg
  • 1/4 c. milk
  • grated Cheddar cheese

Method

  • Saute onion and celery in butter or margarine.
  • Cut, rinse and steam broccoli.
  • Rinse broccoli in cold water and put into ice bath to stop cooking process.
  • Drain in colander and chop coarsely.
  • Add broccoli to sauteed onion and celery.
  • Add rice, salt and Velveeta to broccoli.
  • Mix egg and milk together and add to broccoli and rice mixture.
  • Fold over several times until all ingredients evenly disbursed.
  • Pour into casserole dish.
  • Top with grated Cheddar cheese and bake at 325° for 20 minutes. Allow to set for 1/2 hour before serving so all liquid will absorb into casserole.
