Ingredients
- 1 (10 oz.) pkg. frozen, chopped broccoli
- 1/2 lb. oleo
- 4 eggs
- 1 c. small curd cottage cheese
- 2 boxes Jiffy corn muffin mix
Method
- Cook and drain broccoli.
- Pour melted oleo over broccoli and cool.
- Mix eggs, cottage cheese, broccoli and oleo mixture.
- Stir in corn muffin mix and bake in greased 9 x 13-inch pan in 350° oven for 30 minutes or until lightly browned.
