Ingredients

  • 1 1/2 c. celery strips
  • 1 large onion, cut into small wedges
  • 1 c. pepper strips
  • 1 clove garlic
  • 2 Tbsp. oil
  • 3/4 to 1 lb. ground beef
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. cornstarch
  • 1 1/3 c. water
  • 2 Tbsp. soy sauce
  • 1 1/2 c. boiling water
  • 1 1/2 c. instant rice
  • 1/2 tsp. salt

Method

  • Saute first four ingredients in oil.
  • Remove from the saute pan.
  • Then brown the ground beef with 1 teaspoon salt and pepper. Drain off any fat.
  • Combine cornstarch with water.
  • Mix with soy sauce.
  • Add to meat and vegetables.
  • Cook and stir until thickened. Move mixture to the side of the pan.
  • Add boiling water and instant rice; add 1/2 teaspoon salt.
  • Cover and remove from heat; let stand for 5 minutes.
  • Fluff with fork; then serve.
