Ingredients
- 2 lb. fresh broccoli (or may use frozen)
- 1 c. mayonnaise
- 1 1/2 c. mild Cheddar cheese, grated
- 4 Tbsp. butter or margarine
- 1 can cream of mushroom soup
- 2 eggs, well beaten
- 1 medium onion, chopped
- 1/2 pkg. Pepperidge Farm cheese and garlic croutons
Method
- Do not add additional salt!!!
- Cook broccoli and drain. Combine eggs, soup, mayonnaise and onion.
- Mix these with broccoli and pour into 9 x 13-inch casserole dish.
- Sprinkle cheese over top.
- Melt butter and mix with croutons.
- Spread croutons over top of broccoli mixture.
- Bake 45 minutes to an hour at 350°.
- Very good for freezing.
- Leftovers are excellent!
