Ingredients

  • 1 Tbs. olive oil
  • 1 cup thinly sliced onion
  • 8 6-inch flour tortillas
  • 1/2 lb. soft Brie cheese, cut into 1/2-inch pieces
  • 1/2 cup dried cranberries

Method

  • Preheat oven to 425F (unless making ahead).
  • Heat oil in medium skillet over medium-high heat.
  • Add onion, and cook 5 to 7 minutes, or until soft and browned, stirring often.
  • Transfer onion to small bowl to cool.
  • Arrange 4 tortillas on baking sheet.
  • Divide Brie pieces and onion among tortillas, sprinkle with cranberries, then top with remaining tortillas, pressing to adhere.
  • (If making ahead, cover with plastic wrap, and refrigerate.)
  • Bake 8 minutes, or until cheese melts.
  • Cut each into 6 wedges, and serve.
