Ingredients

  • 5 pounds Premium White Potatoes (I Use Yukon Gold)
  • 12 ounces, weight Cream Cheese
  • 3/4 cups Light Sour Cream
  • 1 whole Egg
  • 3/4 sticks Margarine/butter
  • Salt And Paprika To Taste

Method

  • Peel potatoes and boil until they are fork tender.
  • Beat cream cheese, sour cream and egg at medium speed until well blended. Melt margarine/butter and add to the mashed potatoes. Add sour cream mixture to potatoes. I use a hand mixer to get them really smooth. Beat on medium speed until light and fluffy. Salt to taste. Spoon into a 9x13 greased casserole dish. Sprinkle the top with paprika. Brown in a 350 degree F oven for 30 minutes.
  • To reduce the amount to serve 8 people, use 2 1/2 pounds potatoes, 1/2 stick margarine, one 8 ounce package of cream cheese, and 1/2 cup sour cream plus the one egg.
