Ingredients

  • 7 qt. small cucumbers, sliced thin
  • 1 qt. small onions, sliced thin
  • 1/2 c. salt water
  • 1 1/2 qt. vinegar
  • 1 tsp. turmeric
  • 1/4 lb. white mustard seed
  • 6 c. sugar

Method

  • Let cucumbers and onions stand in salt water overnight.
  • (Use a large enamel pan and just cover cucumbers and onions with water.) Make a syrup of vinegar, turmeric, mustard seed and sugar.
  • Bring to a boil.
  • Add cucumbers and onions which have been removed from the salt water and drained completely dry.
  • Cook on medium heat. Leave in just long enough for it to simmer and just start to bubble.
  • Remove from fire and put in sterilized jars.
  • When jars are filled, add 1/4 teaspoon of powdered alum to each quart; seal.
