Ingredients
- 7 qt. small cucumbers, sliced thin
- 1 qt. small onions, sliced thin
- 1/2 c. salt water
- 1 1/2 qt. vinegar
- 1 tsp. turmeric
- 1/4 lb. white mustard seed
- 6 c. sugar
Method
- Let cucumbers and onions stand in salt water overnight.
- (Use a large enamel pan and just cover cucumbers and onions with water.) Make a syrup of vinegar, turmeric, mustard seed and sugar.
- Bring to a boil.
- Add cucumbers and onions which have been removed from the salt water and drained completely dry.
- Cook on medium heat. Leave in just long enough for it to simmer and just start to bubble.
- Remove from fire and put in sterilized jars.
- When jars are filled, add 1/4 teaspoon of powdered alum to each quart; seal.
