Ingredients

  • 1 small cauliflower, chunked
  • 2 c. broccoli, chunked
  • 8 oz. carrots, sliced
  • 2 large cucumbers, sliced
  • 8 to 10 radishes, sliced
  • 8 oz. cherry tomatoes, halved
  • 1 medium green pepper, cut in strips
  • 1 small can mushroom bits, drained and diced
  • low calorie salad dressing
  • 1/2 tsp. salt substitute

Method

  • In a large
  • bowl,
  • toss
  • all ingredients with dressing. Cover and store in
  • refrigerator for 3 days.
  • Toss ingredients about twice a day.
  • Before serving, sprinkle evenly with salt.
