- 1 small cauliflower, chunked
- 2 c. broccoli, chunked
- 8 oz. carrots, sliced
- 2 large cucumbers, sliced
- 8 to 10 radishes, sliced
- 8 oz. cherry tomatoes, halved
- 1 medium green pepper, cut in strips
- 1 small can mushroom bits, drained and diced
- low calorie salad dressing
- 1/2 tsp. salt substitute
Method
- In a large
- bowl,
- toss
- all ingredients with dressing. Cover and store in
- refrigerator for 3 days.
- Toss ingredients about twice a day.
- Before serving, sprinkle evenly with salt.
