Ingredients

  • 2 eggs, lightly beaten
  • 1/2 c. sugar
  • 1/4 c. pineapple juice
  • 1/4 c. lemon juice
  • 1/8 tsp. salt
  • cornstarch (optional)
  • 1/2 c. diced celery
  • 1/2 c. drained crushed pineapple
  • 2 medium apples, diced
  • 1/2 c. pecans, chopped
  • 1 c. whipping cream, whipped
  • cherries (to garnish)

Method

  • Combine eggs, sugar, pineapple juice, lemon juice and salt. Cook until thick over low heat, stirring constantly.
  • (You may add cornstarch, if necessary.)
  • Cool.
  • Important to cool.
  • Add celery, pineapple, apples and nuts.
  • Gently fold in whipped cream. Spoon into 8-inch square pan and freeze.
  • To serve, cut into squares and garnish with cherries.
  • Serves 8 to 10.
