- 2 eggs, lightly beaten
- 1/2 c. sugar
- 1/4 c. pineapple juice
- 1/4 c. lemon juice
- 1/8 tsp. salt
- cornstarch (optional)
- 1/2 c. diced celery
- 1/2 c. drained crushed pineapple
- 2 medium apples, diced
- 1/2 c. pecans, chopped
- 1 c. whipping cream, whipped
- cherries (to garnish)
Method
- Combine eggs, sugar, pineapple juice, lemon juice and salt. Cook until thick over low heat, stirring constantly.
- (You may add cornstarch, if necessary.)
- Cool.
- Important to cool.
- Add celery, pineapple, apples and nuts.
- Gently fold in whipped cream. Spoon into 8-inch square pan and freeze.
- To serve, cut into squares and garnish with cherries.
- Serves 8 to 10.
