Ingredients
- 2 med. zucchini, peeled, seeded & sliced
- 1 med. onion, sliced
Method
- Mix zucchini and onion and put in pan with 1/2 c. water, salt and pepper to taste.
- Cook till soft.
- Drain and mash.
- Cook again till all liquid is gone.
- Add in 1 Tbsp.
- butter and 3/4 c. Velveeta cheese.
- Cook long sufficient to heat the cheese.
- Mix well.
