Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 3 cups peanuts
  • 1 1/2 teaspoons baking soda

Method

  • Butter 2 (15 x 10 x 2 inch) pans and set aside.
  • In heavy 3-quart saucepan combine the sugars, corn syrup, water and salt.
  • Cook and stir until the sugars dissolve.
  • Continue to cook until the mixture boils; stir in butter and clip candy thermometer to the side of the pan.
  • Continue cooking, without stirring, to 250 degrees or thread stage.
  • Stir in peanuts and cook, stirring constantly, to 300 degrees or hard crack stage.
  • Remove pan from heat and stir in the soda, QUICKLY.
  • Pour onto the buttered pans and spread
