Ingredients

  • 2 cups sugar
  • 1 cup olive oil
  • 4 eggs
  • wheat flour as needed, About 1 kg
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup brandy optional
  • 1/2 lemon peel zest
  • 1 egg yolk for brushing

Method

  • Preheat oven to 180 degrees Celsius.
  • In a large bowl place the eggs and sugar.
  • Beat well.
  • Add olive oil, lemon zest, cinnamon, and brandy.
  • Beat again until the mixture is homogeneous.
  • Afterwards, add the yeast, and gradually add the flour until the dough is consistent for molding.
  • Make small balls, brush with egg yolk, and place on an oven tray greased with olive oil.
  • Bake until browned.
