Ingredients
- 1 lb. beans
- 6 to 8 c. cold water
- 1 tsp. salt or to taste
- 1 1/2 tsp. garlic salt
- 1/4 c. chopped onions
- 1 pkg. sliced Eckrich sausage or sausage of your choice
Method
- Rinse beans and place in large pot. To 1 pound of beans (2 cups), add 6 to 8 cups of cold water. Let stand overnight or at least 6 to 8 hours. Drain, soak water and rinse beans. Add 6 cups cold water, salt and garlic salt to beans. Saut chopped onions. Add to beans. Bring to boil. Reduce heat. Cover and simmer about 1 1/2 to 2 hours. Within 30 minutes of desired bean tenderness, add sausage. Serve over rice.
