Ingredients
- 10 whole wheat (10-inch) tortillas
- 3 c. cooked black beans
- 6 oz. grated Monterey Jack cheese
- 1/2 c. salsa
Method
- In a heated skillet, soften a tortilla by heating it for about 20 seconds.
- Spread a generous 1/4 cup of beans across the middle of the tortilla.
- Top with 1 1/2 tablespoons of cheese.
- Wrap the tortilla around the filling and place the burrito, seam side down, in a greased baking dish.
- Spread salsa on top of burritos and top with remaining cheese.
- bake at 350° for 15 minutes.
- Serve with shredded lettuce, diced tomatoes, salsa and sour cream.
