Ingredients

  • 10 whole wheat (10-inch) tortillas
  • 3 c. cooked black beans
  • 6 oz. grated Monterey Jack cheese
  • 1/2 c. salsa

Method

  • In a heated skillet, soften a tortilla by heating it for about 20 seconds.
  • Spread a generous 1/4 cup of beans across the middle of the tortilla.
  • Top with 1 1/2 tablespoons of cheese.
  • Wrap the tortilla around the filling and place the burrito, seam side down, in a greased baking dish.
  • Spread salsa on top of burritos and top with remaining cheese.
  • bake at 350° for 15 minutes.
  • Serve with shredded lettuce, diced tomatoes, salsa and sour cream.
