Ingredients
- 1 tablespoon of butter
- 1 large onion
- 2 1/4 cups beef broth
- 4 large red beets
- 1 medium can whole or stewed tomatoes
- salt and pepper to taste
- sour cream to serve
Method
- 1. In a large pot melt butter and stir onion for a few minutes, until onion is slightly soft
- 2. Add the beef broth, beets and bring to a boil
- 3. reduce to a medium-low heat and add tomatoes and salt & pepper and cook for 25 to 30 minutes
- 4. Remove all the vegetables from the broth and put them in a blender, blend until smooth and return to broth
- 5. Stir the mixture to blend the vegetable puree and the broth together
- 6. serve with a dollop of sour cream
