Ingredients
- 3/4 lb. London broil, cut into thin strips
- 1 green pepper, seeded and cut into strips
- 2 scallions, sliced
- 1 tsp. finely chopped garlic
- 1 Tbsp. oil
- 3/4 c. water
- 2 Tbsp. light soy sauce
- 1 c. mandarin oranges
- 1/2 tsp. salt
- 1 1/2 c. dry Minute rice
Method
- Saute beef, green pepper, scallions and garlic in oil.
- Add water, soy and pepper sauces, liquid from mandarin oranges and salt and bring to a full boil.
- Stir in rice, then oranges.
- Cover and let stand for 5 minutes.
- Makes 4 servings, each less than 350 calories.
