Ingredients

  • 3/4 lb. London broil, cut into thin strips
  • 1 green pepper, seeded and cut into strips
  • 2 scallions, sliced
  • 1 tsp. finely chopped garlic
  • 1 Tbsp. oil
  • 3/4 c. water
  • 2 Tbsp. light soy sauce
  • 1 c. mandarin oranges
  • 1/2 tsp. salt
  • 1 1/2 c. dry Minute rice

Method

  • Saute beef, green pepper, scallions and garlic in oil.
  • Add water, soy and pepper sauces, liquid from mandarin oranges and salt and bring to a full boil.
  • Stir in rice, then oranges.
  • Cover and let stand for 5 minutes.
  • Makes 4 servings, each less than 350 calories.
