Ingredients
- about 4 c. rich chicken stock
- 4 Tbsp. (1/2 stick) butter or olive oil
- 1 medium onion, chopped
- 1 1/2 c. raw short-grain rice, such as Arborio
- salt and ground pepper to taste
- 1/2 c. Parmesan cheese
- 1/4 c. fresh, chopped parsley
Method
- Warm the stock.
- Have a ladle nearby.
- In a heavy, wide skillet, heat the butter over medium-high heat until bubbly.
- Add onion.
- Saute until light gold.
- Add rice, stirring and tossing the grains until well-coated, about 5 minutes.
